We have two that make the rotation regularly (like tonight), because everyone likes them. One is a chicken & rice casserole that uses long grain & wild rice. The other is parmesan chicken strips. If those ingredients aren't available, we always have steaks in the freezer. So if there's time to thaw them, it's grilling time!
My children love spaghetti bolognese ( I make it and hide lots of extra vegetables in the sauce). For memI would say anything "Mexican" is always a winner- fajitas are nice and quick.
pork roast, brown rice and black eyed peas are a fave and sooo easy. Cooked it yesterday while being gone most of the day. Also, grilled chicken veggie wraps with cut up fruit.
