hmmm. let me look a second for a recipe...i usually just "wing" it with chicken, cheese, beans, cilantro, and grilled onions/peppers (and whatever else you like or have on hand) throw it in a tortilla and then cook on a griddle. but i'll see if i can come up with something more concrete for you :) - Kimber-Leigh |

these look intriguing (no onions) though i've not had them before, but i've made lots of things elise puts on her food blog (Simply Recipes) and i've always been pleased with the results!

I am such a "simple" kind of cook, so I think that recipe would be GREAT, Kimber-Leigh. Thank you girls...Susan Beth, I'll try to fanagle that recipe out of ya LOL. I'm alll about concotions. That's why I am NOT a baker. I eyeball things all the time. Teeheee. I am hoping that trying that new food/recipe out will be one the kids will like AND be one that I could pack in Ella's lunchbox. And THAT is an entire other issue. Packing lunches for the FIRST time! Omigosh..that's next weeeekkkkk!!!!!!!!!!!!!!!!! - ~AMY

I think it was Michele Skinner that had Mexican cooking ideas on her blog. My fav quesadilla recipe is actually a Pampered Chef recipe. Toss together some shredded cheese and some olives and some cilantro and some chicken between two tortillas. Spray with a little cooking spray and bake until they get bubbly. -

Hmm? This is what I do. Line a baking pan with foil and drizzle olive oil. Place 3 chicken breasts on the pan and sprinkle fajita seasoning on top. Bake at 375 degrees for 15-20 minutes on each side. Let sit and cut into cubes after 5 minutes. Coat frying pan with cooking spray and place tortilla in pan. Top with peppers, cheese, and chicken and then more cheese - |

Here's out quick recipe tortillas shredded cheddar (preferrably white) or Jack w/o peppers cooked chicken or beef with a little sazon or goya seasonong (but don't make a spcial tirp, a dash of taco sause or salsa works too) heat up a non-stick pan, place bottom tortilla on hot pan and put a mixture of meat and cheese and top with tortilla - leave about three minutes then flip and repeat until you can see the cheese melt. - Chris http://chrisdodaj.blogspot.com/
